Gluten-Free Chicken Baked in Barbecue Sauce Recipe

When it is too cold to be outside grilling on the barbie, here’s a gluten-free barbecue recipe that you can use indoors.   It works best with bone-in meats, such as chicken breasts or thighs, pork chops or beef spareribs, which tend not to overcook as easily.   Suggestions for side-dishes could be gluten-free potato salad or French fries and a leafy salad or coleslaw.

4 chicken thighs (bone-in, with or without skin)
4 slices of lemon
1/2 medium onion, sliced in rings

Barbecue Sauce
1 cup of Heinz Ketchup
2 cups water
1/3 cup Lea & Perrins Worcestershire Sauce
1 tsp chili powder

Whisk together all sauce ingredients and heat to a simmer.

Gluten-Free Chicken Baked in Barbecue Sauce RecipePreheat oven to 375 degrees F.

Wash chicken thighs and arrange in a roasting pan.  Place a slice of lemon on each piece and scatter onion rings on top.  Pour heated barbecue sauce into pan and place on middle shelf in oven.  Cooking time may vary but will take about 1 hour.  Turn meat occasionally; if sauce seems too thick, add a little more water.  Check for doneness with a meat thermometer or when cut into, juices run clear.  Remove lemon slices; serve up the cooked chicken thighs with the sauce and cooked onions.
