Gluten-Free Lemon & Lime Cheesecake Recipe

This is a really easy, no-bake, recipe for gluten-free cheesecake.  It is fairly rich, so it is even better served with some fruit on the side, such as fresh strawberries or raspberries.

6 oz Kinnikkinnik S’moreables Graham Style Crackers, crushed into crumbs
5 Tbs melted butter
Grated zest and juice of 1 lemon
Grated zest and juice of 1 lime
1/2 cup sugar
12 oz full-fat cream cheese (allow to soften at room temperature for 2-3 hours)
2/3 cup heavy whipping cream

Gluten-Free Lemon & Lime Cheesecake RecipeAdd the melted butter to the graham cracker crumbs and mix thoroughly.  Press the mixture into a 9-inch springform cake pan.  Put the cream cheese, sugar, lemon zest and juice, and lime zest and juice in a mixing bowl and mix thoroughly with an electric mixer.  Whip the cream until soft peaks form; gently fold into the cream cheese mixture.  Pour the mixture on top of the crumb base in the springform pan.  Place in refrigerator overnight to set.
