Gluten-Free Marinara Sauce Recipe

This is a southern Italian tomato sauce which is gluten-free, and very quick and easy to make. Serve over gluten-free pasta as a vegetarian main meal (or one could even add cooked shrimp or chicken for a change) or as a side dish. It is so much nicer and healthier than store-bought! It can be portioned out into individual plastic freezer bags, frozen, and then re-heated when needed.

3 Tbs olive oil
2 Tbs garlic, minced
1 large can (28-oz) crushed Italian tomatoes
2 Tbs fresh basil, minced
2 Tbs fresh parsley, minced
Salt & black pepper
Grated Parmesan cheese (optional)

Gluten-Free Marinara Sauce RecipeCook the garlic in the olive oil in a medium-sized saucepan over medium heat until golden brown.  Add the tomatoes and herbs; stir, add a lid, and bring to a boil. Reduce heat and simmer for 20 minutes.  Season to taste with salt and pepper. When served over gluten-free pasta, grated Parmesan cheese may be sprinkled over the top.
