Gluten-Free Cheese, Onion & Potato Gratin Recipe

Potato is a very versatile carbohydrate that is gluten-free.  Cheese and onion add flavor to this dish which can be a nice accompaniment to grilled meats, such as steak or lamb chops.  This low-cost version uses sharp cheddar cheese and onion, but it can easily be made more sophisticated by substituting more expensive Gruyere cheese and leeks.  If there are any leftovers, they can be wrapped in foil, frozen, and re-heated for another meal.

4 russet potatoes, peeled and cut into 1/4-inch slices
1 medium onion, thinly sliced (or 2 leeks, white parts only, thinly sliced circles)
1 Tbs garlic, minced
1 Tbs butter, room temperature (plus a little for greasing)
1 1/2 cups whole milk
1 cup sharp cheddar cheese (or Gruyere), grated
Salt & pepper

Gluten-Free Cheese, Onion & Potato Gratin RecipePreheat the oven to 350 degrees F.

Lightly grease an oven-proof, glass pie dish.  Mix the butter and garlic together and set aside.  Layer half the potato slices in the bottom of the dish; lightly sprinkle with salt and pepper.  Distribute the onions on top; divide the garlic butter into 6 portions and place evenly on top.  Layer the rest of the potato slices evenly; add the milk and lightly sprinkle with salt and pepper.  Cover the potatoes evenly with the grated cheese.  Bake for 45 minutes or until the potatoes are tender and the cheese is golden brown.
