Gluten-Free Zesty Salsa Recipe

Salsas can be delicious, healthy dips for parties or made as accompaniments to many Mexican dishes. I use this gluten-free recipe as a dip served with gluten-free corn chips.
2 tomatoes, peeled and diced
1/4 cup celery, diced
1/4 cup green bell pepper, diced
1/4 cup onion, diced
1 mild green chile, diced
1/2 tsp ground coriander seed
2 Tbs olive oil
1 Tbs red wine vinegar
Salt & black pepper
Tabasco sauce (optional)
Mix together the diced ingredients, coriander, olive oil and vinegar. Season to taste with salt and pepper. If a hotter version is desired, add 3-4 dashes of Tabasco sauce. Store in the refrigerator for 3 hours to help the flavors develop. Provide a spoon for serving the dip onto gluten-free corn chips.
