Gluten-Free Grilled Bacon-wrapped Shrimp Recipe

This is a very easy gluten-free appetizer recipe. The bacon provides a savory contrast to the marinated shrimp.
1/2 cup olive oil
2 Tbs white wine vinegar
1 Tbs dried dill
1 Tbs garlic, finely chopped
1 lb large fresh shrimp, peeled and deveined (leave tails on)
6 strips thinly sliced bacon
Toothpicks
In a medium bowl, whisk together the oil, vinegar, dill and garlic. Mix in the shrimp, cover and place in refrigerator to marinate overnight. Next day, cut each strip of bacon into thirds and wrap a piece around each shrimp and secure with a toothpick. Grill under a broiler for 4 minutes on each side (be careful not to overcook the shrimp or burn the bacon). Arrange on a serving plate.
13-15 single shrimp servings
