Gluten-Free Vichyssoise Soup Recipe

Vichyssoise (pronounced vee-shee-swahzz) is a delicious, smooth, potato and leek soup which is served cold. The recipe is gluten-free and the soup is great for lunch on a hot summer’s day or it could be served as a starter for dinner.
4 leeks, cut into 1/4-inch slices, white/pale green parts only
1/4 medium onion, diced
1-2 Tbs vegetable oil
2 cups gluten-free chicken stock
2 potatoes, thinly sliced
1/3 cup cream or whole milk
Salt and white pepper
Snipped chives for garnish (optional)
Cook leeks and onions in the vegetable oil until soft and transparent. Add chicken stock, and potatoes. Cover and simmer until potatoes are tender. Season to taste with salt and pepper. Blend in a food processor with the cream/milk (more can be added if the consistency is too thick. Chill for at least 3 hours (it can be made the day before and left covered in the refrigerator). If necessary, season again to taste. Serve in bowls and garnish in the center with a few snipped chives.
