Gluten-Free Salmon Parcel Recipe

Salmon is very nutritious: high in protein, omega-3 fats (good for heart health), and vitamin D (for strong bones), in addition to vitamins B12 and B6, niacin, selenium and magnesium. With this gluten-free recipe, the salmon is steamed in its own juices which helps retain the goodness and flavor of the fish. Serve with boiled or mashed potatoes and a cooked vegetable, such as peas or green beans.
Vegetable oil
1 salmon steak (4 oz.), skinned
1/4 of a medium onion, thinly sliced
1/2 Tbs lemon juice
1/2 tsp dried dill
Salt & black pepper
1 tsp butter
Preheat oven to 350 degrees F.
Brush one side of a sheet of foil with vegetable oil. Place the sliced onion on the oiled side of the foil; sprinkle the dill over the sliced onions. Place the salmon on top of the onion and dill; pour the lemon evenly over the salmon. Sprinkle with salt and pepper to season and place the butter on top. Draw the edges of the foil together, fold to seal and turn ends upwards to make a parcel and to prevent juices from leaking out during cooking. Place on a cookie sheet and bake on the middle rack of the oven for 20 min.
