Gluten-Free Ratatouille Recipe

Ratatouille (pronounced “rat-a-too-ee”) is a French dish originating in Nice. It is a good source of fiber, a colorful accompaniment to grilled meats or seafood, and it is, of course, gluten-free.

2 red peppers, seeded and sliced
2 green peppers seeded and sliced
1 medium onion, sliced into rings
1 Tbs vegetable oil
2 eggplants, diced
5 zucchini, sliced
3 tomatoes, skinned and chopped
Salt & pepper
Chopped parsley (optional)

Gluten-Free Ratatouille RecipePreheat oven to 350 degrees F.

Cook the peppers and onion in the vegetable oil over medium heat for 5 minutes with stirring. Stir in the eggplant and zucchini, and then add the tomatoes. Season to taste with salt and pepper. Put in a casserole, cover and bake for 20-30 minutes. Garnish with parsley before serving.
