Gluten-Free Strawberry Soufflé Recipe

A soufflé (pronounced “soo-flay”) is a baked dessert based on whipped egg whites and can be flavored many different ways. This recipe makes a delightful gluten-free dessert when fresh strawberries are in season.

12 oz strawberries, hulled
6 Tbs sugar plus some to coat soufflé dish
1 Tbs cornstarch
3/4 tsp orange zest (grated peel)
4 large egg whites

12 oz strawberries, hulled, sliced and tossed with 1 Tbs sugar

Gluten-Free Strawberry Soufflé RecipePreheat the oven to 400 degrees F.

Lightly coat a 6-cup soufflé dish with butter and coat with sugar. Puree half of the strawberries, 3 Tbs of sugar and 1Tbs cornstarch in a blender or food processor. Pour into a small, non-stick saucepan. Stir over medium heat until the mixture boils and thickens (about 3 minutes). Stir in the orange zest. Leave to cool completely.

Whisk egg whites in a large bowl until soft peaks form. Gradually add 3 Tbs sugar and beat until stiff, but not dry. Fold the puree into the whites in 3 additions. Transfer to the soufflé dish. Place in the oven and bake until puffy and golden, about 18 minutes. Serve soufflé at once with the sliced strawberries.
