Gluten-Free Bananas Foster Recipe

The original Bananas Foster dessert recipe was created by Chef Paul of Brennan’s Restaurant in New Orleans in 1951. It was named for a frequent customer, Dick Foster. This is a very easy, gluten-free version and absolutely delicious!
2 bananas peeled
2 Tbs butter
1/4 cup dark brown sugar
1/8 tsp ground cinnamon
2 Tbs banana liqueur (optional)
1/4 cup dark rum
4 scoops vanilla ice cream (gluten-free)
Cut the bananas in half lengthwise, and then halved. In a non-stick frying pan, melt the butter and the sugar together over medium heat. Add the bananas and cook until just softened. Sprinkle on the cinnamon. Remove from the heat and add the liqueur and rum. With caution, ignite with a long match. Using a spoon with a long handle, baste the bananas with the warm liquid until the flames subside. Put one scoop of ice cream into each of four dishes, top each with 2 pieces of banana and some of the sauce. Serve immediately.
