Gluten-Free Mandarin & Almond Salad Recipe

This gluten-free salad recipe can be used with any kind of lettuce. The sweetness of the mandarin oranges pairs well with the acidity of the dressing, while the almonds add a nice crunch.

Dressing:
1/4 cup olive oil
2 Tbs white wine vinegar
2 Tbs sugar
Salt & pepper
1 Tbs finely chopped parsley

1 curly-leaved green lettuce, torn into bite-size pieces
1 cup diced celery
2 spring onions, chopped
1/2 cup sliced almonds
1 can (11-oz) mandarin oranges, drained

Gluten-Free Mandarin & Almond Salad RecipeFor the dressing, mix together the olive oil, vinegar and sugar; add salt and pepper to taste. Stir in the parsley and set aside. In a large salad or mixing bowl, toss the lettuce, celery, spring onions, almonds and mandarins together with the dressing.

    This salad looks great, but do you really need 2 tablespoons of sugar in the dressing when you already have all of that sweetness from the oranges?
