Gluten-Free Turkey à la King Recipe

If you are looking for a way to use up any leftover Thanksgiving turkey meat, this is a very tasty, gluten-free recipe which can be served with white or brown rice and cooked, frozen peas or sweet corn as sides. You can also substitute cooked chicken for the turkey.
1 chopped green pepper
1 Tbs vegetable oil
4 oz sliced mushrooms
1 cup turkey or chicken stock (gluten-free)
12 oz cooked turkey, cut into bite-size pieces
1/4 cup heavy whipping cream
Yolks of 2 eggs
1 Tbs fresh lemon juice
1 1/4 Tbs cornstarch stirred into 1/4 cup of water to make a thin slurry
Salt & pepper
Over medium heat, cook the green pepper in the vegetable oil in a medium saucepan for 5 minutes. Add the mushrooms and cook for a further 5 minutes. Remove from the saucepan and set aside in a bowl. Add the stock to the saucepan and bring to a boil. Add the turkey, green pepper and mushrooms and simmer for 5 minutes. Add the cornstarch slurry to the saucepan and bring to a boil with constant stirring; reduce to a simmer for 5 minutes so that the mixture thickens. In a small bowl or cup, mix the cream with the egg yolks and lemon juice; add to the turkey mixture and cook for 2-3 minutes without boiling. Season to taste with salt and pepper.
