Gluten-Free Pork with Green Peppercorn Sauce Recipe

Green peppercorn sauce makes a nice accompaniment to pork which can be a rather mild-tasting meat. This would make a great gluten-free entrée if served with roast potatoes or a wild rice dish.
2 lb pork tenderloin
4 Tbs Dijon Mustard
2 Tbs olive oil
1 tsp butter
2 tsp cracked, dried green peppercorns
3 Tbs whipping cream
3 Tbs dry white wine
Salt & black pepper
Cut the meat across the grain into 1/3-inch thick slices. Sprinkle with black pepper to taste. Spread 2 tablespoon of mustard on one side of the pork slices. In a large skillet or frying pan, heat the oil over medium heat and brown the pork on both sides. Add the butter; continue cooking on both sides until meat is no longer pink. Remove pork to a plate, season to taste with salt, and cover to keep warm. Next, add the green peppercorns to the pan and stir in 2 tablespoons of mustard. Add the cream and wine and bring to a boil. Then, reduce to a simmer for 1 minute. Serve sauce over the pork.
