Gluten-Free Italian Meatballs with Herbed Tomato Sauce Recipe

These gluten-free meatballs are incredibly tender to the bite and taste absolutely delicious in the zesty, herbed tomato sauce. I can guarantee your guests (gluten-sensitive or not) will be begging for more!

Meatballs

1 lb ground beef
1/4 lb ground pork
2 slices gluten-free bread
1/4 cup milk
1/2 medium onion, diced
1/2 tsp dried oregano
1/4 cup Parmesan cheese, grated
2 Tbs fresh parsley, finely chopped
1 egg, lightly beaten
Salt & pepper

In a large bowl, mix together the beef and pork. Briefly, soak the bread in the milk, and then add the bread to the meat. Mix the meat and bread together with the onion, oregano, cheese, parsley and egg; season to taste with salt and pepper (see note below). Form into about 20 meatballs. Line a cookie sheet with parchment paper and arrange the meatballs evenly. Broil under high heat, turning carefully until they are brown all over.

Herbed Tomato Sauce

2 Tbs olive oil
1 medium onion, chopped
1 clove garlic, minced
1 can (12-oz) crushed tomatoes
2 Tbs fresh parsley, finely chopped
1 tsp oregano
Salt & pepper

Gluten-Free Italian Meatballs with Herbed Tomato Sauce RecipeFry the onion in the olive oil over medium heat; add the garlic and cook for another 2 minutes over low heat. Add the tomatoes, parsley, and oregano; season with salt and pepper to taste. Cover and simmer for 20 minutes.

1/2 cup red wine

Gluten-free spaghetti, cooked per package instructions

Add the cooked meatballs to the herbed tomato sauce. Simmer gently for 20 minutes, and then add the red wine and continue cooking for a further 10 minutes. Serve over cooked gluten-free spaghetti.

6 servings

N.B. To adjust the seasoning of the raw meat mixture, it is best to remove a teaspoonful and cook it in a tablespoon of olive oil until browned, then taste it. Add more salt and pepper to the raw meat mixture if needed and then continue as instructed.
