Gluten-Free Pork Tenderloin with Apple & Cranberry Sauce Recipe

This is an Austrian-style recipe which pairs mild-tasting pork with a tart, fruity sauce. This gluten-free dish can served with mashed potatoes or gluten-free fettuccine.

1 lb pork tenderloin, cut into 1/4-inch slices
1/4 tsp salt
1/4 tsp black pepper
1/2 tsp dried thyme
2 Tbs vegetable oil
1 medium onion, chopped
2 large tart apples (e.g. Granny Smith), peeled, cored and thinly sliced
1 can (16-oz) whole cranberry sauce
1 Tbs apple cider vinegar
1 Tbs Lea & Perrins Worcestershire sauce
2 Tbs packed brown sugar

Gluten-Free Pork Tenderloin with Apple & Cranberry Sauce RecipeSprinkle pork with salt, pepper and thyme. In a large heavy pan, brown the pork on all sides in the vegetable oil over medium heat. Remove the pork to a plate; add the onion to the pan and cook until translucent. Add the cooked pork and stir in the apples, cranberry sauce, vinegar, Worcestershire sauce and brown sugar. Bring to a boil, cover with a lid, and then simmer for 40 minutes, stirring occasionally.
