Gluten-Free Chicken Cacciatore Recipe

The Italian name of this dish refers to chicken braised “hunter’s style” with bell peppers, mushrooms, tomato, onion, herbs and wine. It is best served on a bed of gluten-free spaghetti and sprinkled with grated Parmesan cheese.

2 Tbs vegetable oil (more if needed)
2 1/2 - 3 lb chicken, washed and cut up
1 medium green bell pepper, sliced
1/2 lb mushrooms, sliced
1 medium onion, sliced
1 tsp garlic, minced
2 Tbs fresh parsley, finely chopped
1 cup canned tomato sauce
1/2 tsp dried basil
1/2 tsp dried oregano
1 bay leaf
Salt & pepper
1/2 cup white wine

Gluten-Free Chicken Cacciatore RecipePreheat oven to 350 degrees F.

Add the vegetable oil to a large frying pan over medium heat; brown the chicken on all sides. Transfer the chicken to a large ovenproof baking dish. Now, add the bell pepper, mushrooms, onion, garlic and parsley to the frying pan; cook over medium heat until the vegetables are tender (6-7 minutes). Stir in the tomato sauce and herbs; add salt and pepper to taste. Bring the mixture to a simmer and then pour over the chicken. Cover with aluminum foil and bake in the oven on the middle shelf for 45 minutes. Remove the foil, stir in the wine and cook for another 15 minutes.
