Gluten-Free Tropical Shrimp Salad Recipe

This is a very colorful and flavorful shrimp salad recipe and it’s gluten-free! Red leaf lettuce provides an interesting texture, but you could easily substitute other kinds of lettuce or fresh spinach if you prefer.

Marinade:
1/4 cup olive oil
1/4 cup dry white wine
2 tsp lemon juice
1/4 cup onion, diced

30 large shrimp, cooked, peeled and deveined

Dressing:
2/3 cup olive oil
1/4 cup fresh lime juice
2 Tbs honey
2 spring onions, chopped

1 head red leaf lettuce, leaves separated and rinsed under cold, running water
2 avocados, pitted, peeled and sliced
2 papayas, peeled, seeded and sliced
1 small cucumber, peeled, halved lengthwise, seeded and sliced

Gluten-Free Tropical Shrimp Salad RecipeIn a medium bowl, mix together the marinade ingredients. Stir in the shrimp and place the bowl in the refrigerator for 2 hours.

In a blender or food processor, blend together the dressing ingredients. Chill the dressing in the refrigerator for 30 minutes. Arrange the lettuce leaves on 6 plates. Remove the shrimp from the marinade and arrange them on top of the lettuce, alternating with slices of avocado, papaya and cucumber in a pinwheel pattern. Drizzle with dressing and serve.
