Gluten-Free Irish Stew Recipe

Irish stew is a traditional Irish dish that basically consists of lamb or mutton, potatoes and onion; but there are many variations. The potatoes partially render down during cooking which thickens the stew. This gluten-free dinner recipe is quite hearty and very easy to prepare.
1 1/2 lb shoulder of lamb, cut into 1-inch cubes
6 potatoes, peeled and thinly sliced
6 carrots peeled and sliced
1 white or yellow onion, peeled and thinly sliced
2 cups water or gluten-free meat stock
2 tsp rosemary
1/2 tsp thyme
1 bay leaf
Salt & pepper
1/4 cup fresh parsley, finely chopped
Put lamb, potatoes, carrots and onion into a large saucepan; add the water and the herbs. Add salt and pepper to taste. Bring to a boil and then lower heat; cover pan. Simmer for 1 1/2 hours (or until meat is tender). Adjust seasoning to taste with salt and pepper if needed. Transfer to a warm dish and sprinkle with parsley before serving.
