Gluten-Free Tomatillo Salsa Recipe

The tomatillo is native to Mexico and looks like a small green tomato with a paper-like husk. It belongs to the nightshade family which includes plants, such as potatoes, eggplant and bell peppers. It tastes tarter than a tomato and adds a nice “zing” to salsa. This gluten-free salsa can be served as a dip or as an accompaniment to any Mexican meat dish.
4 tomatillos, husks removed
6 sprigs cilantro, stems removed
1 serrano chile, stem removed
2 Tbs diced onion
Salt to taste
With warm water, wash the tomatillos to remove their sticky coating. Cut into quarters. Add all the ingredients to a food processor and pulse to achieve a chunky mixture. Adjust to taste with salt as needed. Serve immediately.
