Gluten-Free Chocolate Eclairs Recipe

Eclairs are a French concoction and consist of Choux pastry, which is quite light and crisp, in an oblong form and filled with whipped cream or custard with a chocolate glazing on top. As you may know, most regular dessert recipes for cakes and pies rely on gluten to provide “lift” and texture; here the gluten-free recipe relies on eggs for this purpose. These gluten-free chocolate éclairs can be made ahead and would make a great ending to a special meal!

1/2 cup water
4 Tbs butter, cut into pieces
Pinch of salt
Pinch of sugar
1/2 cup all-purpose flour, gluten-free, sifted
3 eggs, beaten well

Gluten-Free Chocolate Eclairs RecipePreheat oven to 400 degrees F.

Place the water, butter, salt, and sugar in a medium, nonstick saucepan; bring to a boil. Add all the flour at once. Stir briskly until the mixture forms a soft ball and leaves the sides of the pan clean. Remove from the heat and cool slightly. Add the eggs gradually, beating the eggs into the mixture with a wooden spoon until the pastry is smooth, shiny and firm enough to stand in soft peaks when lifted with the spoon.

Butter a baking tray (or line with parchment paper). Fit a pastry bag with a 1/2-inch plain tube and fill the bag with the pastry. Pipe twelve 4-inch lengths onto the tray. Bake in the center of the oven for 10 minutes. Reduce the temperature to 350 degrees F. and bake for another 20-25 minutes until the Ă©clairs are golden. Turn off the oven. Remove Ă©clairs from the oven and make a small slit in the side of each. Return them to the oven for another 5 minutes to dry out. Cool on a wire rack.

1 cup whipping cream, whisked to a stiff consistency

When the Ă©clairs are cold, slit lengthwise, and fill the lower halves with whipped cream. Replace the tops.

Chocolate Glaze
2 oz dark chocolate, gluten-free, broken in pieces
1 Tbs butter
2 1/2 Tbs warm water
1/4 tsp vanilla extract
3/4 cup Confectioners’ or powdered sugar, gluten-free

Place a small mixing bowl in a saucepan of hot water. Put the chocolate, butter and water in the bowl and leave to melt; stir in the vanilla. Gradually whisk in the sugar. (Use immediately before it sets).

Spread the top of the Ă©clairs with the chocolate glaze.

Makes 12 Ă©clairs
