Gluten-Free Roasted Potatoes Recipe

Potatoes are a source of starch, vitamins and minerals, and are naturally gluten-free. Roasted potatoes make a nice change from French fries or mashed potato and go particularly well with roasted meats, such as beef or poultry. (If you prefer, this recipe can also be made with the skins left on the potatoes which will add more useful dietary fiber).
12 white or red potatoes, peeled and cut to a similar round shape and size
1 Tbs vegetable oil
2 Tbs butter
Salt & pepper
Preheat the oven to 425 degrees F.
Place the potatoes in a saucepan of water with a pinch of salt and bring to a boil. Reduce to a simmer and cook for 5 minutes; drain.
Heat the oil in a square metal baking pan over medium heat. Add the potatoes and turn them in the oil to coat them on all sides. Add the butter, and season the potatoes with salt and pepper. Cook until potatoes are golden on all sides. Place the pan in the oven for about 20 minutes, turning the potatoes occasionally to brown them all over. Serve immediately.
