Gluten-Free Mixed Salad Greens with Honey-Mustard Dressing Recipe

You can easily make variations on this gluten-free salad recipe. For example, you can try different kinds of lettuces, add some thinly sliced red onion, or add some chopped cooked chicken. If you’re in a hurry, most supermarkets nowadays sell pre-washed, ready-to-eat salad mixes.

8 cups mixed salad greens (e.g. romaine, radicchio, arugula), washed, dried, and torn into bite-size pieces

Dressing
3 Tbs olive oil
3 Tbs Dijon mustard
1/4 cup honey
1 Tbs apple cider vinegar
1 Tbs lemon juice
1 Tbs diced shallots
Salt & pepper to taste

Gluten-Free Mixed Salad Greens with Honey-Mustard Dressing RecipeIn a large bowl, whisk together all the ingredients for the dressing. Add the salad greens and toss with the dressing to coat.
