Gluten-Free Shrimp Fajitas Recipe

A fajita (pronounced “fah-HEE-tah) is a type of soft Mexican taco that generally contains grilled meat, such as beef or chicken, and grilled bell peppers and onions. These gluten-free shrimp fajitas will definitely impress your family and friends!
1 red bell pepper, cut into 1/2-inch strips
1 yellow bell pepper, cut into 1/2-inch strips
1 small red onion, cut into thin slices and separated
4 Tbs vegetable oil
Salt & pepper
1 lb shrimp, peeled and deveined
2 limes, zest of one and juice from both
1 tsp chipotle chile powder
8 white corn tortillas (gluten-free)
1 avocado, pitted, peeled and sliced
Fresh cilantro leaves
Garnishes
Sour cream
Zesty salsa (see recipe)
2 limes, cut into wedges
Place rack 4 inches below oven broiler and preheat broiler to high. In a medium bowl, toss the bell peppers and onion with 1 tablespoon of oil, season with salt and pepper. Arrange the vegetables on a baking sheet and broil for about 10 minutes, turning them over occasionally. In a medium bowl, place the shrimp, lime zest and chile powder; toss to coat shrimp. In a large frying pan, heat 3 tablespoons oil over medium-high heat and sauté the shrimp until cooked (about 2-3 minutes). Warm the tortillas according to the package instructions. Place a layer of the vegetables on each tortilla, then the shrimp, and top with avocado and a few cilantro leaves. Serve immediately with the garnishes. (A fajita is folded in half and eaten like a sandwich).
