Gluten-Free Greek Lamb Chops with Lima Beans Recipe

This is a quick and easy gluten-free Greek dinner recipe. The common pairing of lamb with feta cheese gives it a distinctly Mediterranean flavor. By the way, feta can be quite salty, so you may not need to add too much salt to this dish.

4-6 lamb chops
1 1/2 Tbs vegetable oil
4 garlic cloves, crushed
Salt & pepper
1 onion, chopped
2 cups chicken stock (gluten-free)
2 cans (15-oz) lima beans, drained
3 Tbs tomato paste
1 Tbs red wine vinegar
1 Tbs dried dill leaves
3 Tbs crumbled feta cheese

Gluten-Free Greek Lamb Chops with Lima Beans RecipeRub the chops with some of the oil and 1 garlic clove. Season on both sides and set aside. In a medium saucepan, heat the remaining oil over medium heat. Add the garlic and onion; cook until soft (about 8 minutes). Stir in the stock, beans, tomato paste, vinegar and dill. Season and simmer until most of the liquid has evaporated (about 15 minutes). While this mixture is cooking, heat a frying pan over high heat. Brown the lamb chops on both sides (about 5 minutes). Serve the lamb chops on 4 plates and portion each with a side of beans. Sprinkle the feta over the beans.
