Gluten-Free Honey-Mustard Roast Pork Recipe

Pork is a relatively mild-tasting meat, but can be delicious when paired with strong flavors. This gluten-free roast pork recipe relies on a honey and mustard glaze with garlic and sage for added interest. Potatoes and carrots are also cooked with the roast and can be served with some steamed greens for added color and nutrition.

4 medium russet potatoes, peeled and quartered
4 medium carrots, cleaned and chopped
4 Tbs olive oil
4 Tbs Dijon or wholegrain mustard (gluten-free)
4 Tbs honey
2 cloves of garlic, minced
1 pork tenderloin (about 1 1/2 lb)
4 shallots, peeled and sliced in half lengthwise
1 oz fresh sage, chopped

Gluten-Free Honey-Mustard Roast Pork RecipePreheat the oven to 375 degrees F.

Bring a large pan of water with a pinch of salt to a boil. Add the potatoes and carrots, cook them for 5 minutes, and then drain. In a small bowl, mix together the olive oil, mustard, honey and garlic. Place the pork in a roasting pan; surround with the potatoes, carrots and shallots. Spoon the mustard mixture all over the pork and sprinkle with sage. Place in the oven and roast until the pork is thoroughly cooked (about 35-40 minutes) and the vegetables are tender. Remove the pork to a carving board; cover with foil and leave to rest (the pork, not you!). Meanwhile, add 4 tablespoons of boiling water to the roasting pan and stir in any browned particles; bring back to a boil to create a thin gravy. Slice the pork and serve with the vegetables and gravy.
