Gluten-Free Indian-Style Turkey Salad Recipe

This is a great gluten-free recipe for using up leftover cooked turkey or chicken. Curry powder can lose its pungency when it gets old. If you have curry powder on hand and it hasn’t been used for a while, you may need to add a bit more than stated below.

Dressing:
1 Tbs chicken broth (gluten-free)
1 tsp curry powder
1/2 cup mayonnaise (gluten-free)

1 cup diced, cooked turkey
1/2 cup diced, fresh pineapple
1/2 apple, peeled and diced
1/4 cup chopped dates
1/8 cup golden raisins
1 Tbs chutney
Salt

Gluten-Free Indian-Style Turkey Salad RecipeIn a small saucepan, add the chicken broth and the curry powder; heat and stir until a paste forms. Cool the paste and then stir into the mayonnaise.

In a medium bowl, combine the turkey, pineapple, apple, dates, raisins and chutney; season to taste with salt. Stir in the curry mayonnaise mixture. Allow the salad to marinate in the refrigerator for 1 hour before serving.

3-4 servings
