Gluten-Free Coconut Macaroons Recipe

These moist and delicious macaroons are quick and easy to make. They can be a great gift idea for a celiac or gluten-sensitive person in your life! Just arrange the cookies in a nice box with some tissue paper, and a lovely bow – Ta-da!
2 egg whites
3 1/2 oz sugar
5 1/2 oz desiccated coconut
1/4 tsp vanilla essence
Preheat oven to 350 degrees F.
In a large bowl, mix all the ingredients together. Take a large spoonful of the mixture and shape into a small pyramid; place on a non-stick cookie sheet. Repeat to make about 10-15 macaroons. Bake in the oven for 12-15 minutes, until they are lightly browned. Remove to a wire rack and leave to cool.
Makes 10-15 macaroons
