Gluten-Free Haddock & Tomato Gratin Recipe

“Gratin” is a French cooking technique in which food is prepared in a shallow dish and topped with a browned crust, often using breadcrumbs, grated cheese or egg. This is a gluten-free gratin recipe for haddock, but any firm white fish (such as cod, halibut, catfish) could be substituted. It is delicious served with mashed potatoes, rice or a green vegetable!

1 lb haddock fillets, skin and bones removed
2 oz grated Cheddar cheese
4 tomatoes, peeled and sliced
2 cloves garlic, minced
1 tsp dried oregano

Gluten-Free Haddock & Tomato Gratin RecipePreheat oven to 350 degrees F.

Lightly grease (with butter, margarine or vegetable oil) a shallow ovenproof dish and place half the fish fillets in a single layer. Sprinkle with a third of the cheese and then arrange half the tomato slices on top. Sprinkle with garlic and oregano. Arrange the rest of the fish fillets on top, sprinkle with half the remaining cheese and add the rest of the tomatoes. Finally, sprinkle on the remaining cheese and bake until the fish is cooked (about 30 minutes).
