Gluten-Free Cuban Chicken with Onion Salsa Recipe

Looking for a gluten-free recipe for a lunch or late evening snack? This is a fairly quick and easy one to try. Cuban cuisine is a mixture of Spanish, African and Caribbean cuisine, and relies heavily on spices, fruits and vegetables. This gluten-free Cuban chicken recipe is quite zesty and delicious!
Onion Salsa
1 garlic clove, crushed
Half a medium onion, finely sliced
1 Tbs olive oil
Juice of 1 large orange
Salt
Mix together all the ingredients for the salsa; add salt to taste.
3 garlic cloves, crushed
1 tsp dried oregano
1 tsp paprika
1 tsp ground cumin
Juice of 1 lime
2 chicken breasts, skinless, boneless, cubed
1 lime, cut into wedges
In a large bowl, mix together the garlic, oregano, paprika, cumin and lime juice. Add the chicken and marinate for 30 minutes. Thread the marinated chicken onto skewers and grill over a medium heat (or under broil in the oven), turning, until golden and cooked through (about 12-15 minutes). Serve with the salsa and lime wedges.
