Gluten-Free Mediterranean Quinoa Salad Recipe

Quinoa (pronounced KEEN-wah) is a very nutritious, gluten-free seed. This Greek-style salad includes quinoa, cherry tomatoes, black olives and feta cheese, and makes a great gluten-free lunch for home, office or to take on a picnic!
2 cups water
1/4 tsp salt
2/3 cup quinoa (Read package instructions to see if pre-rinsing is required before cooking)
16 cherry tomatoes, halved
12 Kalamata olives, pitted and sliced
4 oz feta cheese, crumbled
1 Tbs minced shallot
4 Tbs chopped fresh parsley
Lemon-Mustard Dressing
3 Tbs olive oil
3 Tbs lemon juice
1 tsp Dijon mustard (gluten-free)
1 tsp minced garlic
Salt & pepper
In a medium saucepan, bring the water, salt and quinoa to a boil. Reduce the heat, cover and simmer for 15 minutes until all the water has been absorbed. Allow to cool at room temperature and fluff with a fork.
In a small bowl, whisk together the ingredients for the lemon-mustard dressing, adding salt and pepper to taste. In a large bowl, toss together the cooled quinoa, tomatoes, olives, feta cheese, shallot, parsley and dressing.
4 servings
