Gluten-Free Greek Cucumber Dip Recipe

Here is a delicious and healthy gluten-free party dip which goes well with crudités (such as raw celery, carrot, cauliflower, or broccoli) or your favorite gluten-free crackers or chips. You can even use it as a salad dressing!
1 cup plain yogurt (gluten-free)
1 garlic clove, minced
2 spring onions, finely chopped
2 Tbs fresh mint, chopped
2 Tbs dried dill
Salt & pepper
1 cup diced cucumber (seeds removed)
Mix together the yogurt, garlic, spring onions, and herbs; season to taste with salt and pepper. Fold in the cucumber. Leave to chill in the refrigerator for 20 minutes before serving.
Makes about 2 cups
