Gluten-Free Chicken Provençal Recipe

Chicken Provençal is a typical French dish which is really easy to make, and this version is gluten-free. Provence is a region of southeastern France next to Italy. The combination of tomatoes and black olives in this recipe really gives this dish a Mediterranean flavor. It is quite hearty and could be served with mashed potato, rice or gluten-free pasta.

8 chicken thighs
2 Tbs vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
1 cup white wine
1 can (15-oz.) diced tomatoes
2 Tbs tomato paste
1 tsp dried thyme
1 tsp dried basil
Salt & pepper
12 black olives, pitted

Gluten-Free Chicken Provencal RecipePreheat the oven to 350 degrees F.

Heat the vegetable oil in a frying pan over medium-high heat. Brown the chicken thighs on all sides and then place in a casserole. Add the onion to the pan and cook until transparent; add the garlic and cook for a 1 minute. Stir in the wine, diced tomatoes, tomato paste, and herbs; add salt and pepper to taste. Pour the mixture over the chicken. Cover the casserole and cook in the oven for 40 minutes (check that the chicken is cooked by inserting a meat thermometer in the thickest part of the thigh). Add the olives. Before serving, adjust the seasoning of the sauce to taste, if needed.
