Gluten-Free Mediterranean Potatoes Recipe

Potatoes don’t have to be boring! This Mediterranean Potatoes recipe makes a gluten-free side dish that is a great accompaniment to grilled meat or fish. Alternatively, they could be served as a vegetarian main dish.
1 1/2 lb new potatoes, scrubbed and quartered
1 large can (28-oz.) crushed tomatoes
2 tsp sugar
2 tsp dried basil
2 tsp dried thyme
1 can (6-oz.) black olives, pitted
Salt & pepper
4 oz. Mozzarella cheese, sliced
3 oz. Parmesan cheese, grated
Preheat oven to 400 degrees F.
Place the potatoes in a large saucepan, cover with water and add a pinch of salt. Bring to a boil and then simmer until tender (about 20 minutes; you should be able to just pierce to the middle of the potato with a sharp knife). Drain off the water; remove the potatoes to a large bowl. Stir together the crushed tomatoes, sugar and herbs in the pan; season to taste with salt and pepper. Bring to a boil; and then simmer for 5 minutes. Stir in the potatoes and olives. Spread half the potato/sauce mixture evenly in a shallow, ovenproof dish. Arrange the mozzarella slices evenly on top, and then spread over the remaining potato/sauce mixture. Sprinkle with the grated parmesan; bake at the top of the oven until the cheese is brown and bubbling (about 10-15 minutes). Serve immediately.
4-6 servings (2-3 servings as a main dish)
