Gluten-Free Italian Bean Soup Recipe

The Italian region of Tuscany is known for its love of dishes containing tomatoes and beans. Savoring this hearty, gluten-free Italian Bean soup will soon have you wishing you could take a trip there!
2 Tbs olive oil
8 strips of bacon, chopped
2 medium onions, diced
4 cloves garlic, minced
2 cans (15-oz. each) mixed beans, rinsed and drained
1 large can (28-oz.) diced tomatoes
5 cups vegetable stock (gluten-free)
1 tsp sugar
6 Tbs chopped fresh parsley
1 tsp dried thyme
1 bay leaf
Salt & pepper
Heat the oil in a large saucepan. Add the bacon and cook over medium heat until lightly crisp (about 2-3 minutes). Add the onions and garlic and cook until golden brown (about 6 minutes). Stir in the beans, diced tomatoes, vegetable stock, sugar and herbs. Bring to a boil, cover, and simmer for 45 minutes. Adjust seasoning to taste, if needed, with salt and pepper.
