Gluten-Free Mini Strawberry Cheesecakes Recipe

These are the cutest, yummiest, little cheesecakes you can imagine! They’re wonderful if you need to take a gluten-free dessert for a potluck or you’re hosting a children’s tea party!

5 Tbs butter
6 oz Kinnikkinnik S’moreables Graham Style Crackers, crushed into crumbs
1 cup ricotta cheese (gluten-free)
1/4 cup confectioners’ sugar
1 egg
1 egg yolk
1/2 tsp vanilla extract (gluten-free)
Zest of 1 lemon
Juice of half a lemon
2/3 cup whipping cream
2 1/2 Tbs strawberry jam
3 strawberries

Gluten-Free Mini Strawberry Cheesecakes RecipePreheat the oven to 300 degrees F.

Line 6 holes of a cupcake pan with paper liners. Melt the butter in a small saucepan; stir in the cookie crumbs. Press the mixture into the base of each paper case. Place in the refrigerator to chill. In the meantime, mix together well the ricotta, sugar, whole egg, egg yolk, vanilla, lemon zest and lemon juice. In a separate bowl, whip the cream until fairly firm; fold into the cheese mixture with a large spoon or rubber spatula. Spoon the mixture into each paper case up to the top; tap the pan on the countertop so the fillings are flattened. Bake for 30 minutes. Turn off the oven and allow the cheesecakes to cool down completely inside the oven. Decorate the top of each cheesecake by placing 1 teaspoon of melted jam in the middle and half a strawberry on top.
