Gluten-Free Asian Noodle Salad Recipe

Here’s a quick and easy oriental-style salad that makes a change from a typical lettuce, cucumber and tomato salad. It is gluten-free and vegetarian, and could be served as a side or main dish.
7 oz. rice noodles
2 Tbs olive oil
1 tsp sesame oil
1 tsp honey
Juice of 1 lime
14 oz. mixed, chopped, stir-fry vegetables (e.g. broccoli florets, red peppers, and bean sprouts)
Cover the rice noodles with boiling water and leave for 4-5 minutes. In a small bowl, whisk together the olive oil, sesame oil, honey and lime juice. Drain the noodles and toss with the chopped vegetables and serve with the dressing.
