Gluten-Free Meatloaf Recipe

Did you know that meatloaf was mentioned in the Roman recipe collection Apicius dating to the 5th century? There are many versions of meatloaf–this one is very easy and, of course, gluten-free. You can serve the meatloaf hot with gravy, and sides of mashed potato and a cooked green vegetable. If there are leftovers, they can be served cold with a salad.

3/4 pounds ground beef
1/4 pound pork sausage meat (gluten-free)
1 onion, diced
1/8 teaspoon dried thyme
1/8 teaspoon dried oregano
1/8 teaspoon dried sage
1/8 teaspoon dried parsley
1 tablespoon tomato ketchup (gluten-free)
1 tablespoon steak sauce (gluten-free)
Salt and freshly ground black pepper
1 tablespoon oatmeal (gluten-free)
1 egg, beaten

Gluten-Free Meatloaf RecipePreheat the oven to 350 degrees F.

Grease a 5 by 9-inch loaf pan. In a large bowl, mix together the meats, onion, herbs and sauces. Season the mixture with salt and pepper, and mix in the oatmeal. Mix in the egg thoroughly. Press the mixture into the pan and cover with aluminum foil. Bake the meatloaf on the middle rack of the oven until the meat is tender (1 to 1 1/4 hours). Slice before serving.
