Gluten-Free Italian-Style Black Olives Recipe

These stuffed olives are savory, and go well with drinks or as an accompaniment with cheese and cold meat platters. Don’t be put off by the anchovies–they taste really good with the capers and olive!
24 colossal black olives, pitted
6 anchovies, chopped into 4 pieces
24 capers
1/4 to 1/2 cup olive oil
Cocktail sticks
Stuff each olive with chopped anchovies and a caper. Marinate in the olive oil for a few hours. Remove from the oil and place in a serving bowl. Provide cocktail sticks on the side for serving.
Makes 24 stuffed olives
