Gluten-Free Saag Gosht Recipe

This is a typical Indian dish consisting of lamb in a spinach sauce. Spinach is a rich source of vitamins and minerals. Some people find spinach has a rather bitter flavor. Here, it is flavored with a variety of spices, so it tastes quite different! (By the way, garam masala is an Indian spice mixture which can be store-bought).

1 1/2 pounds lamb stew meat, cut into 1-inch cubes
5 tablespoons vegetable oil
2 cups diced onion
2 teaspoons minced garlic
1 tablespoon minced fresh ginger
1 tablespoon ground coriander
1 tablespoon paprika
2 teaspoons ground cumin
1 teaspoon turmeric
1/2 teaspoon cayenne
1/2 cup tomato paste
Salt
1 cup packed, chopped, cooked spinach (fresh or frozen)
2 teaspoons garam masala
1/2 cup chopped cilantro leaves

Gluten-Free Saag Gosht RecipeHeat a large saucepan over high heat. Add 3 tablespoons of oil and the lamb. Brown the meat all on all sides, and then transfer to a plate. Add the remaining oil and the onion to the pan. Brown the onions with stirring (about 15 minutes). Stir in the garlic, ginger, coriander, paprika, cumin, turmeric, and cayenne, and cook for 3 minutes. Add the tomato paste, lamb, salt to taste, and cover with water. Bring the contents to a boil; reduce the heat, and simmer, covered, until the meat is tender (about 1 1/2 hours). Stir in the spinach and garam masala. Serve sprinkled with the chopped cilantro.
