Gluten-Free Mini Ham & Mushroom Frittatas Recipe

A frittata is an Italian dish similar to an omelette or quiche (without the crust) with added ingredients, such as meats, cheeses, and vegetables. These mini-frittatas make a “delightful, gluten-free bite-full”! They can be served hot or cold. We suggest providing some spring greens or halved cherry tomatoes tossed in vinaigrette as an optional accompaniment.
3 teaspoons olive oil
1/2 pound mushrooms, chopped
6 medium eggs
4 ounces lean ham, chopped
4 tablespoons reduced-fat cream cheese
6 green onions, chopped
1/2 teaspoon hot pepper sauce (more if preferred)
Salt and freshly ground black pepper
Preheat the oven to 350 degrees F.
Over medium heat, sauté the mushrooms in 1 1/2 teaspoons of oil for 2 minutes.
In a medium bowl, whisk the eggs. Beat in the ham, cream cheese, green onions, mushrooms, and hot pepper sauce, and season with salt and pepper.
Lightly grease 12 cups of a mini-muffin pan with the remaining oil. Pour the egg mixture into the cups (make sure the contents of the mixture are evenly distributed), and bake for 20 minutes.
Makes 12 servings
