Gluten-Free Asian-Style Swordfish Steaks Recipe

Swordfish is moist and meaty (rather like tuna), and can handle robust flavorings. Here, the fish is flavored with an Asian-inspired marinade, and then grilled. Great served with rice and stir-fried vegetables!
4 swordfish steaks, 6 ounces each
1/2 cup vegetable oil
3 tablespoons soy sauce (gluten-free)
2 tablespoons dry sherry
1 1/2 teaspoons grated fresh ginger root
1 teaspoon orange zest
Freshly ground black pepper
Place the swordfish in a large plastic zipper bag.
To make the marinade: whisk together the oil, soy sauce, sherry, ginger, and orange zest in a small bowl. Add pepper to taste.
Pour the marinade into the zipper bag, and seal. Place the bag in the refrigerator to allow the fish to marinate overnight, turning occasionally.
Grill the steaks over medium heat for 4 to 5 minutes per side (basting with the marinade) or until firm to touch.
Serves 4
