Gluten-Free Lemon Panna Cotta Recipe

Panna cotta is a cold dessert originating in Italy and translates to “cooked cream”. The recipe requires the use of ramekins, which are small, glazed ceramic or glass bowls. The gluten-free panna cotta is flavored with lemon, and is delicious served with a garnish of fresh raspberries.
4 cups heavy whipping cream
1 cup sugar
4 1/2 teaspoons unflavored gelatin
3 teaspoons lemon zest
Juice of 1/2 fresh lemon
Garnish: whole raspberries
Heat the cream in a saucepan. Add 1 cup of sugar and the gelatin; stir until dissolved. Add the lemon zest and lemon juice; simmer for 10 minutes. Pour the mixture into 6 ramekins, and refrigerate for 5 hours.
Slide the panna cotta onto a plate; garnish with whole raspberries.
Serves 6
