Gluten-Free Shrimp & Pineapple Kebabs Recipe

These kebabs are good for a light supper and should be served over white, basmati, or brown rice. Pretty on the plate and gluten-free!

3 cloves garlic, minced
A thumb-size piece of fresh ginger, minced
2 tablespoons water
Juice of 1 lime
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound tail-on shrimp, shelled and deveined
Fresh pineapple chunks
Wooden skewers, soaked in water for about 1 hour

Gluten-Free Shrimp & Pineapple Kebabs RecipeIn a large resealable plastic bag, combine the garlic, ginger, water, lime juice, olive oil, salt and pepper. Add the shrimp; seal the bag, and turn to coat. Place in the refrigerator to marinate for 15 minutes.

Preheat the grill to medium-high heat (350 to 400 degrees F.) or preheat the broiler.

Remove the shrimp from the marinade; discard the marinade. Thread the shrimp onto the skewers, alternating with chunks of pineapple. Grill or broil for 4 minutes per side or until the shrimp are opaque. Serve immediately.
